Extreme Cookie Butter Cupcakes
Cookie butter is all the rage even in our part of the world. It used to be difficult to find (and costly too) but these days, certain supermarkets already carry them. The one I bought was Biscoff brand.
For some reason, the little girl (or hubby) was not so fond of it, preferring instead a homemade one. So I had almost the whole bottle to use up... I decided on cookie butter cupcakes, stuffed with cookie butter and frosted with cookie butter frosting! How's that for a cookie butter overload?!
I didn't have a recipe for cookie butter cupcakes, though. What I did was use my go-to peanut butter cupcake recipe and simply swapped the peanut butter with the cookie butter!
Here they are just before going into the oven...

Queen's Favorite
It is wonder that these cupcakes made an appearance only now...
seeing as I love peanut butter! But I guess my only excuse is that I
often indulged by eating peanut butter... cookies!
What's even more amazing is the overwhelmingly wonderful response by everyone who took a bite out of these cupcakes!!!

Vanilla Buttermilk Cupcakes
I have about 2 liters of buttermilk to use up. I've done buttermilk
pancakes and buttermilk scrambled eggs. Now it's vanilla buttermilk
cupcakes... with chocolate chips and frosted with peanut butter
frosting.
I've always considered my vanilla cupcake recipe to be the best, and never thought that I could find one that I could like more. But this vanilla buttermilk cupcake is really better! The texture is better, and the taste superb!
The downside? This cupcake is more expensive to make because of the buttermilk.

Vanilla Cupcakes, with Mild Strawberry Buttercream
When the little girl is bored, she gets really "makulit". When I get bored, I read... or go to the kitchen.
This time, I was craving vanilla cupcakes. But I didn't want any ordinary vanilla cupcakes... I wanted one with a hint of... strawberry... not in the cupcake but in the frosting...
So here are my cupcakes out of the oven... I think they look gorgeous!
And here's the cupcakes with vanilla buttercream with a hint of strawberry... (though you wouldn't know by seeing it because the frosting looks a bit orange-y but trust me I loved the hint... yes, just a hint... of strawberry in the icing!)

Disney Princess and Castle Cake
Last year, the little girl made her birthday wishes known... castle and Disney princess...
I was stumped about the castle bit, until a dear friend pointed me in the direction of a cut-out castle (and I was all prepared to do it too!). Then a "guardian angel" gave a real (toy) Disney castle ("playhouse") last Christmas and so... all I had to do was plop the whole thing on top of cake and decoratively arrange the princess figurines!
Presenting... B's 5th birthday cake!
The kids in school were so enamored by the cake!
Anyway, here are the cupcakes, which the little girl said should be Disney princess too, and pink...
And, of course, since it wasn't appropriate for boys to have princess cupcakes... so they got Mickey Mouse instead...
I was the star that day... because I made her wish come true!

Triple Ultimate Ube Cupcakes
We already have an ultimate ube cupcake which has a double dose of ube. But this Triple Ultimate Ube Cupcake takes it to a higher level!
This particular combination was a special request. The requirement? A whole bottle of ube halaya to be used up! So here's THE ultimate ube cupcake - with a TRIPLE dose!
Ube cupcake stuffed with ube halaya, then frosted with ube halaya buttercream!

It was a massive hit! There's been a lot of inquiries, in fact!
We love it!

Mochaccino
Mocha is another favorite flavor. Mocha, as Wikipedia explains, could refer to a coffee drink or a coffee bean (amongst others). Mocha, as a flavor, however, is often thought of as a mix of coffee and chocolate flavors. Mochaccino is a coffee drink with chocolate.
MaBelle's version is a mocha cupcake, frosted with coffee (or mocha, or chocolate) buttercream, with a sprinkling of cocoa (and cinnamon, optional), topped with a coffee bean (for decoration purposes only).
The cupcakes are yummy (of course!). Although personally, I think the coffee flavor overpowers the chocolate a bit. Then again, mocha is coffee with chocolate, not the other way around... ...

Ultimate Ube Cupcakes
Ube is my favorite flavor! Especially when it's an ube chiffon cake. It took me a while to make an ube cupcake because I'd been used to the light and airy ube cake that the heavier-type cupcake was strange to me. Until my repeated experimentation finally resulted in one that I was ok with... and while my "traditional" frosting for ube is a whipped cream (sometimes with macapuno), for this one I wanted a super-duper ube umph. So this ube cupcake is frosted with ube halaya buttercream! And I have decided to call them "Ultimate Ube" because the double ube - cake AND frosting!

Frost
I've often admitted it - I am NOT a fan of chocolate. I don't hate
it, it's just that I don't really crave it or look for it. In fact,
when I was (way, way) younger and had suitors who gave boxes of
chocolate, it was my younger brother who benefited!
Oh well.
But, seeing as there are a lot of chocoholics out there (who keep asking for chocolate goodies...) here's another one... of the white variety.
As usual, I used my go-to (absolute favorite) vanilla cupcake recipe and made a few (little) changes by adding melted white chocolate.
The big (and happy) surprise? They were perfect!!! If I would "fall in love" with any chocolate cupcake, this would be it!!!

The cupcakes were more than vanilla! They had a subtle hint of white chocolate, not overpowering, with exactly the right flavor! And the buttercream? Wow, heavenly!!!
